Scotch pies should, ideally, be made from lamb, but it's pretty uncommon to get a pie that resembles anything but pasty, oily mush these days. Some places do very good ones, like Crombies, perhaps. Like our pies here, it really depends where you buy them, the best are from bakeries where they bake on the premises. Others as you say are pretty ordinary and full of "filler" which is rather nasty.
